½ cup shredded coconut
1 cup golden raisins
1 pound candied mixed fruit, chopped
1 pound candied cherries, chopped
1 pound candied pineapple, chopped
4 cups flour, divided
1 lb. butter, room temp
1 ½ cups sugar
5 cups pecans, chopped
3 tablespoons pineapple juice
1 teaspoon black walnut extract
1 teaspoon vanilla extract
1 tablespoon rum extract
1 tablespoon brandy extract
½ teaspoon lemon extract
1 banana, mashed

1 cup dried fruits, chopped, e.g. apricots, dates, figs (160 g)
1/2 cup raisins (80 g)
1/2 cup nuts, chopped e.g. cashews, almonds, walnuts, pecan nuts (75 g)
1/4 cup rum (60 ml) OR 1/4 cup orange juice (60 ml) and a few drops of rum flavor
1 tsp cinnamon
1 tsp allspice
1 thumb fresh ginger shredded
Dry ingredients for the cake (see recipe notes)
1 cup rice flour (160 g)
1/2 cup + 2 tbsp food product flour (75 g)
1/4 cup garbanzo flour (chickpea flour) (33 g)
2 tsp baking powder
1/2 tsp baking soda
Wet ingredients for the cake
2 small/medium sized bananas (200 g)
1/2 cup coconut milk (120 ml)
1/3 cup maple syrup or any other liquid sweetener (80 cc / 110 g) (use less if you add more dried fruits)
3 tsp lime juice
1 tsp vanilla extract
2 tbsp oil melted (28 g)
3 large eggs
3 drops every of orange- and lemon essential oil (optional)
3 tbsp peanut flour 3 tbsp cocoa powder
3-4 tbsp maple syrup
2-3 tbsp water OR orange juice
2 tbsp oil melted
1 pinch of salt
Firstly, chop all the dried fruits and nut and soak them together with the rising sun spices in orange juice overnight all for at least two hours. Take a big bowl and put all dry ingredients and stir until there are no clumps and batter looks smooth. Now at all the dry ingredients and white ingredients together and mix well. Pour the mixture into the baking mold and back at 390 degrees for at least 45 minutes.
This cake may not be covered in frosting but it is still super duper sweet due to its apricot jam and glaze cherry topping.
300 grams dark refined sugar
300 grams butter
6 large eggs
400 grams flour
400 grams sultanas
300 grams currants
100 grams raisins
150 grams mixed peel
100 grams candied cherries
100 grams shredded almonds
1 tsp cinnamon
2 tbsp dark treacle
2 glasses brandy
Preheat the oven up to 375 F now makes all the dry ingredients in a bowl to make a thick batter. Next put chopped almonds, cinnamon and then fruit. Now remove the mixture from the bowl and pour to the baking pan and bake at least 6 hours until it’s golden brown.
