Before you make these tasty Fruitcake recipe, I have complied some tips which are need to know. I hope these tips are useful for you.

  • Always soak the fruit – a minimum of overnight it’ll soften and make the cake wet
  • You can add the liquid in which the fruit was soaked to the batter one by one. (unless you wish to limit amount of alcohol)
  • Always fill pan not more than 2/3 rd.
  • To avoid burning due to slow cooking, line the baking pans on all edges of baking pan.
  • I prefer to line pan and add cake strips to avoid the outer edges drying.
  • Ensure oven temperature is low therefore the batter can cook equally without drying out the fruit
  • Add some water to the baking tray around the pan or a small bowl of water in the oven to assist keep the cake moist.
  • Mixed spice is generally made with Cinnamon, ginger powder, cloves, all spice and nutmeg generally even caraway seeds, cardamom and cayenne.
  • Don’t like the above spices or can’t find them? – add the Cinnamon and one tsp vanilla or 1/2 tsp almond extract

This amazing fruit cake is a mixture of rum, brandy and pineapple juice with shredded coconut which makes this cake different from the rest.

Ingredients:
½ cup shredded coconut
1 cup golden raisins
1 pound candied mixed fruit, chopped
1 pound candied cherries, chopped
1 pound candied pineapple, chopped
4 cups flour, divided
1 lb. butter, room temp
8 eggs
1 ½ cups sugar
5 cups pecans, chopped
3 tablespoons pineapple juice
1 teaspoon black walnut extract
1 teaspoon vanilla extract
1 tablespoon rum extract
1 tablespoon brandy extract
½ teaspoon lemon extract
1 banana, mashed

Directions

Preheat microwave oven to 275 F after the take large mixing bowl and put all the ingredients into the bowl. At all the extract send mix until it is combined. This 30 minute recipe is very easy to bake. This citrusy and colorful fruitcake made with whiskey apricots and cranberries.

Ingredients:

For the Fruit:
2 cups dried cranberries or orange-flavored dried cranberries
2 cups dried apricots, chopped
1/2 cup whiskey (or water, or juice)
1 3/4 cups candied red and green cherries
For the Cake:
1 cup unsalted butter
Zest of one orange
2 cups refined sugar
2 tsp. baking powder
1 tsp. salt
4 large eggs
3 3/4 cups general-purpose Flour
1 cup fresh squeezed orange juice

Directions

Mix dried fruit except the cherries with whiskey in a bowl and set aside now preheat the oven to 325F. After the take large bowl and put all the ingredients into it then blend all together until they mix well. Now add drained fruit and candied cherries. Remove mixture from bowl and pour into the baking tray. Bake the cake at least three hours until golden brown.

3.Cream cheese Fruitcake

The core ingredients of this fruitcake is cream cheese which makes this glace, cheery loaded, loaf moist, light and even more flavourable.

Ingredients:

8 oz cheese

4 eggs

2 cups flour
2 t baking powder
2 sticks butter

1 t vanilla extract
3/4 cup of refined sugar
1 t salt
3 cups edible fruit & nut mix + 1/2 cup flour

Directions

Preheat the microwave oven to 325F. Mix the butter and sugar together then mix cream cheese after adding cream cheese and eggs vanilla extract and other ingredients very well and constantly mix until it becomes smooth. Take another bowl add fruit nut mix and dry fruits and nuts of your choice. Fold dry ingredient into the wet ingredients now the batter will be quite thick. After this place the cake in the oven and let bake for 60 to 70 minutes until it make golden brown.

4.Chocolate Fruitcake

It’s very quiet easy to understand by this vegan desert and gluten free is a crowd pleasure: it’s smothered in chocolate.

Ingredients:

Dried fruits, nuts and spices
1 cup dried fruits, chopped, e.g. apricots, dates, figs (160 g)
1/2 cup raisins (80 g)
1/2 cup nuts, chopped e.g. cashews, almonds, walnuts, pecan nuts (75 g)
1/4 cup rum (60 ml) OR 1/4 cup orange juice (60 ml) and a few drops of rum flavor
1 tsp cinnamon
1 tsp allspice
1 thumb fresh ginger shredded
Dry ingredients for the cake (see recipe notes)
1 cup rice flour (160 g)
1/2 cup + 2 tbsp food product flour (75 g)
1/4 cup garbanzo flour (chickpea flour) (33 g)
2 tsp baking powder
1/2 tsp baking soda
Wet ingredients for the cake
2 small/medium sized bananas (200 g)
1/2 cup coconut milk (120 ml)
1/3 cup maple syrup or any other liquid sweetener (80 cc / 110 g) (use less if you add more dried fruits)
3 tsp lime juice
1 tsp vanilla extract
2 tbsp oil melted (28 g)
3 large eggs
3 drops every of orange- and lemon essential oil (optional)
Chocolate glaze
3 tbsp peanut flour 3 tbsp cocoa powder
3-4 tbsp maple syrup

2-3 tbsp water OR orange juice
2 tbsp oil melted
1 pinch of salt

Directions

Firstly, chop all the dried fruits and nut and soak them together with the rising sun spices in orange juice overnight all for at least two hours. Take a big bowl and put all dry ingredients and stir until there are no clumps and batter looks smooth. Now at all the dry ingredients and white ingredients together and mix well. Pour the mixture into the baking mold and back at 390 degrees for at least 45 minutes.

5.Naked fruitcake

This cake may not be covered in frosting but it is still super duper sweet due to its apricot jam and glaze cherry topping.

Ingredients:

300 grams dark refined sugar
300 grams butter
6 large eggs
400 grams flour
400 grams sultanas
300 grams currants
100 grams raisins
150 grams mixed peel
100 grams candied cherries
100 grams shredded almonds
1 tsp cinnamon
2 tbsp dark treacle
2 glasses brandy

Directions

Preheat the oven up to 375 F now makes all the dry ingredients in a bowl to make a thick batter. Next put chopped almonds, cinnamon and then fruit. Now remove the mixture from the bowl and pour to the baking pan and bake at least 6 hours until it’s golden brown.
